Ingredients and Variations
Mushrooms: Be sure to sweat the mushrooms until they’re dry to intensify the nutty, woodsy flavor of the mushrooms.
Gravy Base: Cream gives keto gravy its smooth consistency (and healthy fats), but you can also use carb-friendly almond or cashew milk for a thinner gravy.
Seasonings: Use homemade chicken seasoning, or DIY a homemade garlic and herb or Italian blend.
Xanthan Gum: Xanthan gum is fermented sucrose with bacteria and is used as a thickening agent and a binder instead of almond or coconut flour. It’s easy to find in any health food store, or it can be ordered online. Guar gum should work too.
Variations: Add sliced mushrooms for a thicker, heartier gravy recipe, or mix some ground pork to make a country-style gravy. You can change out the turkey or chicken broth for some beef broth if desired.
How to Make Keto Gravy
- Cook mushrooms in butter and seasonings (recipe below).
- Whisk broth, water, and xanthan gum until smooth. Pour into mushroom mixture and bring to a boil.
- Simmer for 5 minutes, stir in cream, and season before serving.
Tips to Make the Best Keto Gravy
Mix in a little Kitchen Bouquet to get that deep brown, gravy color, but be aware it will add a few carbs.
If xanthan gum isn’t available, a cornstarch slurry can be made with the same amounts as the xanthan gum. This option will also add a few carbs.

Ingredients
- 3 tablespoons butter
- 1 cup fresh mushrooms sliced, about 3 ounces
- ¾ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon poultry seasoning
- 2.6 cups chicken or turkey broth condensed, low sodium, 10.5 ounce can
- ⅓ cup water
- 1 ¼ teaspoon xanthan gum more as needed
- 2 tablespoons heavy cream
Instructions
- Melt butter in a medium saucepan over medium-low heat. Add in mushrooms, onion powder, garlic powder, and poultry seasoning. Cook 4-5 minutes until the mushrooms release their liquid.
- In a medium bowl whisk broth, water, and xanthan gum. You may have a few lumps, this is ok.
- Add the broth mixture to the saucepan and bring to a boil. Reduce heat to a simmer and let cook 5 minutes. Stir in heavy cream and season with salt & pepper to taste.
Notes
- Cornstarch slurry can be used in place of xanthan gum – but keep in mind it will add a few carbs to the recipe. Combine equal parts cornstarch and water, then whisk into the simmering broth.
- For a richer brown color, 1/8 tsp of Kitchen Bouquet can be added but just be aware that it will also add a few carbs to the recipe.
- This gravy will keep in an airtight container in the refrigerator for 3-4 days.
