Zucchini: We love zucchini because it does not need to be peeled. Shred using a box grater for the best results. The key to perfect fritters is to squeeze out as much liquid as possible in Step 3 so everything sticks together.
Cheese: Mozzarella and parmesan add flavor and help hold the fritters together as the cheese melts.
Oil: Vegetable oil is called for in the recipe, but olive oil or avocado oil are also keto-friendly options.
Variations
- Experiment with the seasoning by adding some chopped fresh herbs or a DIY Greek or Italian blend. Try adding a few red pepper flakes for some kick.
- In addition to mozzarella, try adding cheddar, feta, or blue cheese crumbles. Just don’t exceed the amount of cheese indicated in the recipe.
- Serve fritters with a dollop of sour cream, Greek yogurt, or a tasty sauce like keto cheese sauce, tzatziki sauce, or low carb ranch dressing & dip.
How to Make Zucchini Fritters

- Prepare zucchini, squeezing out excess moisture (recipe below).
- In a large bowl, thoroughly combine all ingredients.
- Shape the zucchini mixture into fritters and fry in oil, flipping once.
In the Air Fryer
- Preheat air fryer to 370°F.
- Spray fritters with cooking spray.
- Cook in a single layer in the air fryer until golden brown.
Storing and Reheating
Storage: Keep leftover zucchini fritters in an airtight container in the refrigerator for up to 3 days.
To reheat: Spray leftovers with cooking spray and reheat them on medium heat in a dry saute pan until crisp. Or reheat them in the air fryer.
To freeze: Place cooled fritters in a freezer bag and freeze for up to a month. Thaw before reheating.

Zucchini Fritters Recipe

Ingredients
- 1 medium zucchini about 12 ounces
- ½ teaspoon salt or to taste
- 1 egg
- ½ cup shredded mozzarella cheese
- ¼ cup almond flour
- 1 green onion thinly sliced
- 2 tablespoons grated parmesan cheese
- ½ teaspoon baking powder
- 1 tablespoon vegetable oil
Instructions
- Using the larger holes on a box grater, grate the zucchini.
- In a colander, toss the zucchini with salt and let it rest for 10 minutes.
- Once rested, use cheesecloth or a clean towel to squeeze out as much liquid as possible from the zucchini.
- In a medium bowl, combine the zucchini, egg, cheese, almond flour, green onion, and baking powder. Mix well.
- Divide the mixture into 6 equal portions and shape into fritters.
- In a large skillet, heat the oil over medium heat.
- Cook each fritter for 3 to 5 minutes per side until they're a deep, golden brown.
Notes
- To air fry: Spray fritters with cooking spray and place them in air fryer basket. Cook at 370℉ for 8-10 minutes or until golden.
