We Love These Zucchini Fritters Because…

  • Similar to potato or corn fritters, zucchini fritters have a crispy flavor without the carbs.
  • You can serve them as a light lunch, appetizer, or side dish.
  • They are easy to reheat. Double the batch and enjoy them all week, or freeze some for later.
Ingredients to make zucchini fritters labeled: vegetable oil, salt, green onions, zucchini, mozzarella, egg, almond flour, mozzarella, parmesan, and baking powder.

Ingredients for Zucchini Fritters

Zucchini: We love zucchini because it does not need to be peeled. Shred using a box grater for the best results. The key to perfect fritters is to squeeze out as much liquid as possible in Step 3 so everything sticks together.

Cheese: Mozzarella and parmesan add flavor and help hold the fritters together as the cheese melts.

Oil: Vegetable oil is called for in the recipe, but olive oil or avocado oil are also keto-friendly options.

Variations

  • Experiment with the seasoning by adding some chopped fresh herbs or a DIY Greek or Italian blend. Try adding a few red pepper flakes for some kick.
  • In addition to mozzarella, try adding cheddar, feta, or blue cheese crumbles. Just don’t exceed the amount of cheese indicated in the recipe.
  • Serve fritters with a dollop of sour cream, Greek yogurt, or a tasty sauce like keto cheese sauce, tzatziki sauce, or low carb ranch dressing & dip.
