2.6cupschicken or turkey brothcondensed, low sodium, 10.5 ounce can
⅓cupwater
1 ¼teaspoonxanthan gummore as needed
2tablespoonsheavy cream
Instructions
Melt butter in a medium saucepan over medium-low heat. Add in mushrooms, onion powder, garlic powder and poultry seasoning. Cook 4-5 minutes until the mushrooms release their liquid.
In a medium bowl whisk broth, water and xanthan gum. You may have a few lumps, this is ok.
Add the broth mixture to the saucepan and bring to a boil. Reduce heat to a simmer and let cook 5 minutes. Stir in heavy cream and season with salt & pepper to taste.
Notes
Cornstarch slurry can be used in place of xanthan gum - but keep in mind it will add a few carbs to the recipe. Combine equal parts cornstarch and water, then whisk into the simmering broth.
For a richer brown color, 1/8 tsp of Kitchen Bouquet can be added but just be aware that it will also add a few carbs to the recipe.
