Holly’s Keto Highlights

  • Flavor: These homemade egg and almond flour crackers are savory, mildly nutty, and subtly garlicky with a crisp bite.
  • Difficulty: Using only four ingredients and easy prep, these homemade crackers come together quickly, so you can get snacking!
  • Swaps: Swap the garlic crackers for a taco-inspired snack by using a southwest blend or a kick of spicy blackening seasoning.
  • Serving suggestions: Keto crackers are the best crunchy snack or appetizer. Top with some chicken salad or dip into avocado salsa, buffalo chicken dip, or sausage cheese dip.

Ingredient Insights

  • Dough: Just almond flour and an egg form the base of this recipe, so easy.
  • Seasonings: Garlic powder gives a little punch of flavor to keto crackers.

Creative Cracker Combos

  • For a different flavor, coconut flour can be used in place of half the almond flour.
  • Onion powder, red pepper flakes, or a teaspoon of keto-friendly powdered Ranch dressing can be added to the dough for tasty variations.
  • An extra-large egg will make the crackers even more crispy. A sprinkle of sesame, flax, or chia seeds will give the crackers a pop of color and a little extra nutrition.
  • These crackers would taste great with a sprinkling of Parmesan cheese.

Tips For Perfect Keto Crunch

  • Add 1 tablespoon of water if the dough isn’t forming.
  • Mix the dough until it barely holds together before rolling it out. This helps keep air bubbles in so the crackers are light and crispy.
  • Roll the keto crackers out to ¼” thickness, being careful not to overwork them. Overworking can result in dense crackers.
  • Cut them into squares using a pizza cutter or a sharp knife.

Leftover Lifesavers

  • Keep keto crackers in an airtight zip-top bag or container at room temperature for up to 1 week.
  • Use leftovers (or broken bits) to top caesar salad or cauliflower soup. Freeze them for up to 8 weeks in a zip-top bag.

Ingredients

  • cups almond flour
  • 1 large egg
  • ¼ teaspoon garlic powder
  • kosher salt to taste

Instructions

  • Preheat oven to 350°F. Line a baking tray with parchment paper.
  • Combine the almond flour, egg, and garlic powder in a large bowl and mix until fully combined.
  • Place the dough on a sheet of parchment paper and press down. Lay another parchment sheet on top and with a rolling pin, roll out ¼ inch thick.
  • Cut the dough into squares and place on the baking sheet. Sprinkle with salt or seasonings.
  • Bake for 17 minutes, flipping halfway through cooking.

Notes

  • If the dough is not coming together, add 1 tablespoon of water.
  • There will be fewer air bubbles if the dough is not over-mixed. Dough should barely hold together before rolling out.
  • Do not overwork the dough, and roll it out to ¼” thickness.
  • Use a pizza cutter or sharp knife to cut dough into squares or rectangles.
  • Store crackers in a zip-top bag or container for up to 1 week on the counter, or in the freezer for up to 8 weeks.
  • Leftovers (or broken bits) are perfect toppers for salads or soups.
