Ingredients  

  • 1 pound boneless skinless chicken breasts
  • cup salsa
  • ½ cup water
  • 2 tablespoons keto taco seasoning

For serving

  • 8 low-carb tortillas 4-inch or butter lettuce leaves
  • sour cream optional
  • toppings as desired tomatoes cheese, avocado, cilantro, lettuce, jalapenos

Instructions 

  • In a 10-inch skillet combine the salsa, water, and taco seasoning. Add the chicken and bring to a boil over medium-high heat. Reduce to a simmer, cover, and cook for 15-20 minutes until chicken is cooked through (165℉), stirring occasionally.
  • Remove the chicken from the skillet and shred with two forks. Add it back to the sauce and simmer, uncovered, over medium heat until thickened, about 3 minutes.
  • Serve the chicken in low-carb tortillas or lettuce leaves with your favorite taco toppings.
