Broccoli – Choose fresh florets for the best results. Frozen can be used but will not be as firm once cooked. Go half broccoli, half cauliflower for a new twist on the recipe!

Cheese Sauce – For the best flavor and extra creamy sauce, use full-fat cream cheese, heavy cream, and cheddar.

Topping – DIY keto breadcrumbs are the secret to the crispy topping! Make extra and keep it on hand to top parmesan chicken or to use as a binder for turkey meatballs.

Variations – Add other keto veggies like sliced mushrooms, shredded zucchini, diced bell peppers, or peas.

How To Make Broccoli Au Gratin

Broccoli au Gratin is healthy, low-carb comfort food!

  1. Prepare topping per recipe directions below.
  2. Steam broccoli and place in a covered bowl to keep it warm.
  3. Bring cream and seasonings to a boil in a saucepan. Reduce heat to a simmer.
  4. Stir in cream cheese until melted. Remove sauce from heat and stir in cheddar cheese.
  5. Spread broccoli in the bottom of a casserole dish and pour the cheese sauce over the broccoli.
  6. Sprinkle topping evenly over the casserole and bake until the top is golden and the cheese is bubbly.

Tips For Success!

Be sure to drain steamed broccoli, or thawed broccoli, well to keep the casserole from becoming soggy.

Set cream cheese out while assembling the rest of the ingredients so it has time to soften for easier blending.

Let the casserole rest about 5 minutes before serving to help it firm up a bit.

Serving And Storage Solutions

Serve as a hearty side dish along with fried chicken, meatloaf, pork chops or even steak! It can also be converted to a main dish simply by adding diced ham, summer sausage, or some shredded chicken!

Keep any leftovers in a covered container in the refrigerator for up to 5 days. Reheat on the stovetop or in the microwave with a tiny bit of milk to help loosen the cheese sauce.

Broccoli Au Gratin

This cheesy broccoli casserole with crispy low carb topping is the best!

Ingredients  

Topping

  • 1 slice keto bread
  • 1 tablespoon butter melted
  • ¼ cup parmesan cheese shredded

Broccoli

  • 3 ½ cups broccoli florets approx. one large head
  • 1 cup water

Sauce

  • 2 ounces cream cheese cubed
  • 1 cup heavy cream
  • ½ teaspoon onion powder
  • 1 ½ cup cheddar cheese shredded
  • ¼ teaspoon salt or more to taste
  • teaspoon pepper

Instructions 

  • Preheat oven to 375°F
  • Blend keto bread in a food processor until it becomes crumbs. Mix with melted butter and parmesan cheese. Set aside.
  • Wash broccoli and place it in a non-stick skillet. Add 1 cup water and bring to a simmer over medium heat.
  • Cover broccoli and steam 4-6 minutes. Remove & place in a bowl. Cover to keep warm.
  • In a medium saucepan, heat heavy cream, onion powder, salt and pepper to boiling. Reduce heat and let simmer 2 minutes.
  • Stir in cream cheese until melted. Remove from heat and stir in cheddar cheese.
  • Spread broccoli evenly in the bottom of a 2 qt baking dish. Pour cheese sauce over the broccoli. Sprinkle with bread crumb mixture.
  • Bake for 20-25 minutes until top is golden and the cheese is bubbly.

  • Broccoli au gratin will keep for up to 5 days in the refrigerator.
  • Portions can be frozen for up to 4 weeks.
