Baked Zucchini Fries

Crispy baked zucchini fries with a parmesan and almond flour coating make the perfect low carb snack.

Equipment

Mixing Bowls or shallow container

Ingredients  

  • 2 medium zucchini
  • 2 eggs
  • ½ cup grated parmesan cheese
  • ¼ cup almond flour
  • 1 teaspoon Italian seasoning
  • 1 ½ teaspoons parsley
  • salt & pepper to taste

Instructions 

  • Preheat oven to 425°F.
  • Whisk eggs in a small bowl. In a separate bowl, combine parmesan cheese, almond flour, Italian seasoning, parsley, and salt & pepper.
  • Cut zucchini into wedges. Dip in beaten egg and then in parmesan cheese mixture.
  • Place on a pan and bake 20-25 minutes or until crisp.
  • Serve with low carb tomato sauce.

  1. On this and other recipes from easylowcarb, the nutritional breakdown does not include the serving size. This makes the posted nutritional data useless. I realize the recipe specifies 4 servings, but the data chart doesn’t make that distinction. Is it for the whole recipe? Or, is it for 1/4 of the recipe?3 stars

      1. Right, but what I think their point is, is that it doesn’t specify what a serving size is. I’m going to assume that because your recipe says it serves 4, and you’re using 2 medium zucchini, that half of 1 zucchini is a serving. Correct me if I’m wrong.

  3. Is there instruction for using an air fryer for this recipe? Are the zucchini fries supposed to be air-fried at the same temperature and for the same length of time as the baked recipe states?

    1. For cooking in an air fryer preheat it to 375°F and cook for 8 minutes, then flip the sticks over and cook an additional 6-8 minutes.

  4. I’m so glad you posted the zucchini fries. Earlier today I received an email for the same recipe and the cards were 39 per serving. I am on a diabetic died and can have 30 grams for breakfast and lunch so to their recipe wasn’t low carb.
