This simple meringue recipe has only 3 ingredients and super easy prep:
- Whip egg whites and fold in seasonings.
- Portion them onto a prepared baking sheet.
- Bake as per the recipe below.
How Long to Bake Meringue
- Bake until tops are slightly golden on top, about 30 minutes.
- Turn the oven off and let cheese meringues dry out completely about 1 hour.
PRO TIP: Don’t remove the meringues from the oven too soon as the change in air temperature will make them crack and sink.
Meringue Tips!
- Use large eggs to create the most height for the meringues.
- Over mixing the meringue will prevent it from properly puffing up.
- Pipe the meringue onto the prepared baking sheet for uniformly shaped meringues. Scoop batter into a zip bag and cut the corner off of one side for quick and easy piping.

- 4 egg whites
- ¾ cup parmesan cheese
- salt and pepper to taste
Instructions
- Preheat oven to 275°F. Grease a baking sheet and lightly dust with flour.
- Whip egg whites until they form stiff peaks.
- Gently fold in cheese and seasonings.
- Scoop 1 tablespoon amounts onto the prepared baking sheet and bake for 30 minutes. Meringues should be slightly golden on top when done.
- Turn off oven and leave the door open to let the meringues dry out for 30-60 minutes.

This recipe turned out delicious, but they definitely were not as nice as the ones pictured above. I should have piped them onto the baking sheet instead of using a tablespoon scoop (I followed the recipe card, and didn’t see this as a note in the blog post). I also ended up with more meringue mix than I could fit on one baking sheet. It made more than I expected. Next time I’ll be better prepared and make adjustments – perhaps scaling everything down or up to get even batches.
