Twists & Tomato Turns
- Instead of grape tomatoes, use thick slices of heirloom tomatoes or Romas.
- Can’t find burrata? Use fresh mozzarella or bocconcini balls for a caprese-style dish. Other cheeses to try are shaved curls of Parmesan Reggiano and even cottage cheese.
- For more savory flavor without overwhelming the ingredients add a bit of garlic herb seasoning. A pinch of red pepper flakes would add a pop of color and a zesty zing.
- Arrange the ingredients over a bed of mixed greens or arugula. Drizzle some homemade kale pesto and top with toasted slivered almonds, pine nuts, or, for a nut-free crunch, try hemp seeds, pepitas, or sunflower seeds.
