What You’ll Need
- Pork sausage: Use mild or hot, depending on spice preference. I just slit open the casings and discard them before cooking and crumbling the loose filling.
- Cream cheese: Use full fat, room temperature cream cheese for a creamy smooth dip.
- Diced tomatoes with green chiles: Canned Rotel makes it easy to adds vegetable flavor and juiciness to cut through the richness of the other ingredients. Choose mild or hot versions.
- Sharp cheddar cheese: Sharp cheddar melts creamy and adds flavor. In a pinch? Use pre-shredded cheese.
Variations
- Swap pork sausage for turkey or chicken sausage for a lighter dip.
- Use Quesadilla cheese or Monterey Jack for a sausage queso dip with Mexican inspired flair.
- A splash of hot sauce or a pinch of smoked paprika adds extra heat or smokiness.
- Add a handful of sautèed mushrooms or onions if you want extra texture.

From Skillet to Serving

Holly’s Tips for Perfect Party Dip
- Drain canned ingredients and cooked sausage well to ensure a thick and creamy dip. For a thinner, more smooth consistency, pulse tomatoes briefly before adding.
- If the dip thickens too much while sitting, stir in a splash of milk or cream to loosen.
- Prep ahead by cooking sausage the day before. Simply reheat before mixing in cheese.
- Keep it warm in a crock pot (on low) for creamy, scoopable comfort that outlasts any gathering.

How to Save & Reheat
- Store leftover dip in a tightly covered container in the refrigerator for up to 4 days.
- Reheat gently on the stovetop or in the microwave, stirring often for even melting.
- This sausage queso freezes surprisingly well. Cool completely, cover tightly, then store up to 2 months. Thaw overnight and reheat slowly on a low setting, adding a splash of cream if needed.
