VEGETABLES: Kale makes for the best veggie for Zuppa Toscana because it stays firm during cooking. But, spinach, collard greens, even cabbage can be substituted. Cauliflower replaces the potatoes, but broccoli, zucchini, or mushroom can be added for extra color, texture, and nutrition!
SOUP BASE: Chicken broth and heavy whipping cream give this soup its signature creamy base. Add additional spices like Italian seasoning for a fuller-bodied soup.

- Cook sausage, bacon, and onion. Drain fat.
- Add remaining ingredients except for heavy cream.

Keto Zuppa Toscana Soup
Equipment
Ingredients
- 1 pound Italian sausage
- 1 large onion diced
- 6 slices bacon diced
- 4 cups cauliflower chopped
- 1 ½ cups kale chopped, or fresh spinach
- 3 cloves garlic minced
- 5 cups low sodium chicken broth
- ½ teaspoon red pepper flakes optional
- 1 cup heavy cream
- pepper to taste
Instructions
- In a large pot, cook sausage and onion until no pink remains. Drain and set aside.
- Cook bacon over medium heat until crisp. Drain on a paper towel and drain fat from the pan.
- Add in cauliflower, kale, garlic, chicken broth, crushed peppers (if using), and sausage. Bring to a boil.
- Reduce heat and simmer uncovered 6-7 minutes or until cauliflower is tender.
- Stir in heavy cream and pepper and let simmer 2 minutes.
- Garnish with bacon and parsley.

I haven’t tried it so I can’t say for sure Brenna. You could try coconut cream or another non-dairy milk. If you try it I would love to hear how it turns out!
Brenna just so you know, this soup is also delicious without the heavy whipping cream. You do not need to put the cream in this soup but it will be a brothy soup verses a creamy soup.

I’m writing next week’s shopping list, including what I need to make this soup. From the photo, I can’t tell for sure, so I’ll ask. Is the Italian sausage uncased? Did you take it out of the case or did you buy it uncased? Can I use sliced cased Italian sausage?
I used uncased Italian sausage. You can either buy it uncased or take it out depending on what you can find in the store! I hope this helps Candy.
I’ve been making this soup for years! It wasn’t until I went on my carb diet that I realized that all I needed to do was substitute the potatoes for the cauliflower. My family wants their soup every time they come home now. One granddaughter is obsessed and will call me from college and say I’m coming home will you make my soup!
I use hot Italian sausage in mine as it really gives it the best flavor and a bit of a zing as well! Occasionally I have to eat the one with potatoes because I’m just craving my soup..lol.
If made with potatoes, this does not freeze well, the cauliflower does freeze well but not meant for long term freezing. I would say no longer than 2 weeks.
