Ingredients
Tomatoes: This is a great recipe for using a garden full of fresh cherry tomatoes. Store-bought cherry tomatoes are great too. Make stuffed tomatoes using red, yellow, orange, green, and purple grape tomatoes.
Cheese: Cream cheese blends easier into the feta at room temperature, so leave it on the counter for an hour or so before making this appetizer.
Seasonings: Savory seasonings like garlic and onion powder add depth of flavor to stuffed cherry tomatoes.
Herbs: Fresh dill and parsley are flavorful as well as aromatic. Use larger sprigs for garnishing the serving platter.
Variations
- Dress up stuffed cherry tomatoes even more by adding bacon bits, toasted nuts, or chopped spinach to the cheese mixture.
- Garnish stuffed cherry tomatoes with a single bay shrimp or a small piece of smoked salmon for more elegant occasions.
- Blue cheese crumbles, shredded cheddar, mozzarella, or parmesan cheese all have robust flavor profiles for stuffed tomatoes. Boursin can be used in place of cream cheese, feta, garlic, and onion powder if time is short.
- For even more flavor, stir in some low-carb garlic and herb seasoning or this easy Italian blend. Fresh thyme or basil can also be used as a garnish.
