Holly’s Grilled Greens Highlights
- Flavor: Grilled Brussels sprouts are savory, with smoky-sweet edges and a tangy cheese topping.
- Difficulty: This recipe is so easy because the BBQ does all the work.
- Recommended Tools: A grilling basket or mat can help keep loose or skewered Brussel sprouts from falling through the grates.
- Prep Note: Cook, skewer, and season ahead, then grill when ready.
Sizzling Sprout Staples
Brussels Sprouts: Fresh is best in this grilled Brussels sprouts recipe, but frozen can be used once they’re thawed and patted dry. Choose sprouts that are similar in size for even cooking.
Seasonings: Garlic oil and a little salt and pepper are all it takes to elevate the flavor of fresh summer Brussels sprouts.
Brusselin’ Up New Flavors
Use leftover bacon grease for a punch of smoky flavor. Add a splash of sriracha to the oil and seasonings in Step 4 for a spicy bite or use your favorite low-carb brown sugar or maple syrup substitute for a sweeter, stickier side dish.
Once the Brussels sprouts are grilled, sprinkle some homemade keto breadcrumbs over them and pop them under the broiler for a crispy golden topping.
Drizzle sprouts with balsamic vinegar and a dash of sriracha, or wrap brussel sprouts in strips of uncooked bacon and sprinkle with brown sugar before roasting on the grill for a new flavor twist.
How to Make Grilled Brussels Sprouts
- Prepare and soften Brussel sprouts (recipe below).
- Toss sprouts in oil and seasonings and thread onto skewers.
- Grill the sprouts until tender-crisp and browned.
- Serve with a sprinkle of Parmesan cheese and a lemon wedge, if desired.
Pro Pointers for Perfect Sprouts
- Par-boiling is an important step for making perfectly cooked and crispy Brussels sprouts. This ensures they are cooked through and retain their bright green color.
- If using wooden skewers, be sure to soak them in water while preparing the Brussels sprouts. This will keep the skewers from splintering into the sprouts or burning on the grill.
- Skewers and grilling baskets are helpful in keeping sprouts from slipping through grill grates without compromising their flavor.
- Brussel sprouts cook quickly, so be sure to turn them frequently to get an even caramelization on all sides without burning them.
Savvy Sprout Serving & Storage
This grilled Brussels sprouts recipe makes a wholesome side dish for grilled beef, chicken, pork, or shrimp.
Keep leftover grilled Brussels sprouts in a covered container (on or off the skewers) in the refrigerator for up to 3 days. Use leftovers in soups, salads, or added to a beef stir fry. Delicious reheated under the broiler to make them crisp again.
