Simple Ingredients
Chicken – Boneless skinless breasts, drumsticks, and thighs will work in this recipe. Chicken breasts can even be cut into chunks and grilled kabob-style! Stock up on chicken when it’s on sale and freeze pieces in smaller portions so they’re always available!
Marinade – Greek yogurt is creamier than regular yogurt so it adheres better to the chicken pieces.
Variations – Switch up the seasonings with this DIY garlic and herb seasoning or an Italian blend that can also be used to season grilled veggies. Add some fried capers for even more flavor.
How To Make Greek Chicken
- Prepare marinade (as per the recipe below).
- Marinate chicken in a bowl for up to two hours.
- Grill chicken for 6-8 minutes per side.
- Let chicken rest before garnishing with lemon slices, chopped parsley, or a sprinkle of red pepper flakes.
Serving and Storing Ideas
Keep leftover Greek chicken in a covered container in the refrigerator for up to 4 days. Slice or chop it up and use it cold in a salad, tuck it into a wrap for an energizing workday lunch, or add it to a tasty soup.
Tips For Success!
- Chicken breasts might need to be flattened so they cook evenly. Simply roll them between two pieces of parchment paper with a rolling pin or use a meat mallet.
- A meat thermometer is your best bet for determining if the chicken is done. It should read 165°F when placed in the thickest part of the meat.
- Letting the meat rest after it’s taken off the grill allows the juices to recirculate back into the meat so it stays nice and juicy!
