Best Hamburger Soup Recipe

Of all our low carb soup recipes, this is definitely one of the best! We love how easy it is to prepare, it’s only two steps! Cook it one day and serve it for dinners and lunches all week long! Delicious served with cucumber salad with feta or an easy tomato salad!

Ingredients and Variations

MEAT – Ground beef is super tasty in soup! No hamburger? Use leftover meat like chicken or turkey, which are both equally low carb. Toss in some bacon bits for some extra flavor!

VEGGIES  – This recipe has a colorful assortment of vegetables but cauliflower and cauliflower rice really make it hearty and filling. However, broccoli, spinach, zucchini, bell peppers, even mushrooms make a great addition to hamburger soup.

BROTH – A combination of beef broth and diced tomatoes with onion and garlic makes for a rich and savory soup base.

SEASONING – Italian seasoning gives this soup its signature Italian style flavor. Garnish with shredded Parmesan or Romano cheese!

How To Make Hamburger Soup

1-2 and done is all it takes to make this healthy soup! Serve hot with a dollop of sour cream, salsa, or the cheese of your choice and it still stays keto!

  1. Brown ground beef with onion and garlic until no pink remains. Bloom the spices by adding them to this mixture. Drain off any fat.
  2. Add remaining ingredients to the pot and bring soup to a boil. Simmer until the vegetables are tender, about 15 minutes.

Recipe Tips & Tricks

  • If you’re short on time, toss in a bag of frozen “vegetable medley” into the soup pot. They are already cut and ready to use and most medleys have low carb versions, including green beans, cauliflower, carrots, and peas.
  • If cauliflower rice can’t be found, simply cut a whole cauliflower into quarters and run each piece through a food processor over a box grater until small rice-sized pieces are created. Easy peasy!

Hamburger Vegetable Soup

This Keto hamburger soup is easy, delicious and so versatile. Served at dinner or lunch, it's a great way to keep your low carb nutrition goals in check.

Equipment

Ingredients  

  • 1 lb lean ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 cups cauliflower florets
  • 1 cup cauliflower rice
  • ½ cup carrot sliced
  • 1 cup celery sliced
  • 14 oz canned diced tomatoes with juices
  • 6 cups beef broth
  • 1 cup green beans
  • 1 teaspoon Italian seasoning
  • salt & pepper to taste

Instructions 

  • Brown ground beef, onion and garlic until no pink remains. Drain fat.
  • Add all remaining ingredients and bring to a boil. Reduce heat to a simmer and let cook 15 minutes or until vegetables are tender.

    I made this today and enjoyed it so much, I thought I made it for myself but my hubby tried it and loved it. He is not a big soup eater. If you enjoy soup you will really like it!

    1. You can find cauliflower rice in the freezer section. If you use regular rice, the recipe isn’t Keto. If you aren’t eating Keto, then go for it!

    This was a great starter recipe! I added sautéed mushrooms, Zucchini, kale at the end and worcestershire sauce for a little umami. Would’ve never thought to use this much cauliflower or cauliflower rice…brilliant and delicious! Thanks for sharing.

    1. I haven’t tried it so I can’t say for sure Teresa, but I am sure it would work just fine. I would suggest browning the beef and adding it to the slow cooker along with the remaining ingredients. Then cook on low for 4-6 hours or until the vegetables are tender! If you try it I would love to hear how it turns out!

    This soup was excellent! Cauliflower is a bit hard on my stomach so I just added the 3 cups of florets. I did not miss the potatoes I normally would have added. My hubs also loved the soup as well! Definitely a keeper recipe! Thank you!

    I knew I was going to love this just from the reviews. I followed the recipe you suggested and of course it was fabulous! I actually made a triple batch of this because I am starting my keto diet and it was the perfect opportunity. I used fresh green beans so it had to cook a whole lot longer but it was worth the effort. I had 2 huge pots and after all cooled, I bagged it in zip lock freezer bags and froze it. Oh and in the end, I actually added a package of bacon crumbles to the mix. I think this would be good with a few pepper flakes as well. Thank you for this amazing recipe!
