Ingredients & Variations
Cabbage – Any color of cabbage will do! Be sure to peel away any torn or discolored leaves and chop cabbage into bite-sized pieces. Bulk it up with a bag of coleslaw, if you like.
Beef – Ground beef or pork is perfect for this recipe, but it can also be omitted for a vegetarian version and no one will notice!
Broth – For the best health benefits, choose low-sodium broths like beef, chicken, or vegetarian. Look for low-carb and sugar-free marinara or pasta sauce and canned tomatoes. Stir in some sour cream or Greek yogurt if you want a creamier soup.
Seasonings – Thyme, Worcestershire sauce, a bay leaf, and a dash of pepper add savory flavor to cabbage roll soup, but you can add Italian seasonings for even more flavor if you like.
Variations – Switch out the beef for sliced summer sausage, diced ham, or leftover shredded chicken or turkey. Low-carb veggies like cauliflower, broccoli, celery, zucchini, and diced turnips add extra texture and flavor.
How to Make Cabbage Roll Soup
Tender chunks of cabbage are simmered in a beefy tomato broth with cauliflower rice and savory seasonings.
- Cook onion, garlic, and beef in a large pot. Drain any fat.
- Stir in cabbage and cook until slightly softened (per the recipe below).
- Add remaining ingredients and simmer until soup is thickened. Remove the bay leaf.
- Garnish cabbage roll soup with cracked black pepper, and a sprinkle of fresh thyme or parmesan cheese, if desired.
Tips & Tricks
- Cabbage can be grated in a food processor for a smoother soup. This also helps it cook faster and soak up more flavorful broth.
- Sautee the cabbage in leftover bacon grease to add a smoky flavor to the cabbage and caramelize the edges.
How to Store Leftovers
Leftover cabbage roll soup will keep for 3 to 4 days in the refrigerator. The rice may soak up some of the broth so add a bit of water or broth if needed before reheating on the stove.
Freeze soup in zippered bags on a baking sheet and then stack them upright in the freezer to save space! Freeze for up to 6 months. Thaw in the refrigerator before reheating.
