- 1 small onion , diced
- 4 cloves garlic , minced
- 1 pound lean ground beef , or lean ground pork
- 14.5 ounce can petite diced tomatoes , with juices
- 4 cups cabbage , chopped
- 2 cups riced cauliflower
- 2 tablespoons tomato paste
- 4 cups beef broth , low sodium
- 1 cup low carb marinara sauce
- ½ teaspoon thyme leaves
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- salt & pepper , to taste
Instructions
- In a large pot over medium heat, brown onion, garlic, and beef until no pink remains. Drain any fat.
- Add cabbage to pot and stir until slightly softened, 3-4 minutes.
- Add remaining ingredients and simmer, covered, on low until cabbage is tender and soup is slightly thickened (about 30 minutes). Taste and season with additional salt and pepper if desired.
- Remove bay leaf and serve.
