What Are Cabbage Rolls?

Stuffed cabbage rolls are the ultimate crowd-pleaser! Plus, they are so easy to make! It’s one of our favorite dinners, chock full of juicy ground beef and cauliflower rice wrapped into rolls and baked with a lightly seasoned tomato sauce. Cabbage rolls are a low carb lover’s dream, for dinners or desk lunches! Cabbage rolls can be made the lazy way too, by just chopping the cabbage instead of making it into stuffed rolls. Either way, this dish is delish.

How Do You Make Cabbage Rolls

Cabbage rolls are made easily by following these easy steps!

  1. Prepare the cabbage leaves according to recipe and set them aside. Mix tomato sauce and pasta sauce.
  2. Brown ground beef with onion, drain.
  3. Add cauliflower rice to the skillet along with the seasonings and one-third cup of mixed sauces. Simmer until thickened.
  4. Spread a layer of tomato sauce on the bottom of a casserole dish.

PRO TIP: Remove the core, then boil and freeze a whole cabbage for up to a month before use. Freezing the cabbage ahead of time makes the leaves easy to manipulate.

How Do You Roll Cabbage Rolls?

  1. If the spines of the cabbage leaves are still too tough, remove them with a paring knife.
  2. Scoop some hamburger mixture into the center of each cabbage leaf. Gently roll up, being careful to tuck in the ends, and place each roll, seam side down in the casserole dish. Top with remaining sauce.

How Long To Cook Cabbage Rolls

Cover the casserole dish with aluminum foil and bake for about 75 to 90 minutes, according to recipe at the bottom of this post. Remove from the oven and let rest about 15 minutes before serving.

How Do You Store Cabbage Rolls?

  • Can you refrigerate cabbage rolls? Yes, they will keep in your refrigerator for about 3-5 days stored in a tightly covered container.
  • Can you freeze cabbage rolls? Wrap cooled cabbage rolls in pairs in plastic wrap. Place wrapped rolls in a zippered bag with the date written on the outside. Cabbage rolls will last in the freezer for about 3 months. Let them thaw in the refrigerator, and reheat in the microwave or the oven.
  • What is the best way to reheat cabbage rolls? Cabbage rolls reheat easily in the microwave. Or, place them in a casserole dish and cover with aluminum foil, adding a little extra tomato sauce, and reheat in the oven at 350 °F for about 25 minutes.

What To Serve With Cabbage Rolls?

Cabbage rolls go with anything! But in keeping with the low carb theme, we chose a side of roasted green beans, or some Air Fryer stuffed mushrooms. Don’t forget a colorfully tangy cherry tomato salad recipe!

Low Carb Cabbage Rolls

Baked Cabbage Rolls are a savory, low carb classic that everyone loves.

Ingredients  

  • 1 head cabbage
  • lbs ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 cups cauliflower rice thawed if frozen
  • ½ teaspoon dried dill
  • ¼ teaspoon dried thyme leaves
  • 3 tablespoons fresh parsley divided
  • 1 cup low carb tomato sauce
  • cups low carb pasta sauce

Instructions 

  • Bring a large pot of water to a boil. Cut ¼" off the bottom of a head of cabbage and place the cabbage into boiling water. Simmer 2 minutes and then remove the softened leaves. Repeat until all of the leaves are removed. Remove any tough stems from cooked leaves.
  • Preheat oven to 350°F. Combine pasta sauce and tomato sauce. Set aside.
  • Place ground beef, onion and garlic in a large skillet. Brown over medium heat until no pink remains. Drain fat.
  • Add cauliflower rice to the beef mixture with dill, thyme, and ⅓ cup of the tomato sauce. Simmer filling 3-4 minutes to combine flavors.
  • Spread a thin layer of tomato sauce mixture in a 9×13 dish.
  • Use a knife to remove any thick stems on the cabbage leaves. Fill each leaf with about ⅓ cup filling.
  • Roll the cabbage while tucking in the sides and place seam side down in the prepared pan.
  • Top with remaining sauce.
  • Cover the pan and bake 75-90 minutes. Let cool 15 minutes before serving.

Notes

Smaller leaves can be overlapped to make more rolls.
