Ingredients

medium zucchini
about 12 ounces

teaspoon
salt
or to taste

egg

cup
shredded mozzarella cheese
¼
cup
almond flour
1
green onion
thinly sliced
2
tablespoons
grated parmesan cheese
½
teaspoon
baking powder
1
tablespoon
vegetable oil
Instructions
Using the larger holes on a box grater, grate the zucchini.
In a colander, toss the zucchini with salt and let it rest for 10 minutes.
Once rested, use cheesecloth or a clean towel to squeeze out as much liquid as possible from the zucchini.
In a medium bowl, combine the zucchini, egg, cheese, almond flour, green onion, and baking powder. Mix well.
Divide the mixture into 6 equal portions and shape into fritters.
In a large skillet, heat the oil over medium heat.
Cook each fritter for 3 to 5 minutes per side until they're a deep, golden brown.
Notes
To air fry: Spray fritters with cooking spray and place them in air fryer basket. Cook at 370
℉ for 8-10 minutes or until golden.
