- 1 tablespoon olive oil
- 1 ½ cup sharp white cheddar cheese shredded, divided
- ¼ cup parmesan cheese shredded
- 1 cup heavy cream
- 2 cloves garlic minced
- ¼ salt or more to taste
- ⅛ pepper
