This low carb homemade beef bone broth recipe is so easy to make and packed with all kinds of goodness!
A homemade broth is healthy and filled with minerals, collagen, and lots of nutrients. With a little prep and some hands-off time, it’s easy to make homemade.
Homemade Beef Bone Broth
- While store-bought brands are convenient, they’re often salt-laden and lack true, cooked-in flavor. We use unpeeled onions and carrots to extract every last bit of flavor!

Beef Stock vs Beef Broth
Note: This homemade beef bone broth is light in flavor but heavy on nutrition! It does not taste like a store-bought box or can of broth and does not taste like typical soup stock.
The technical difference between broth and stock is that a stock is made by extracting flavor from the bones and cartilage, producing a rich, dense flavor that’s best in sauces and soups. Beef broth includes bones and pieces of meat.
If using store-bought beef stock or broth, it is most often flavored with additional ingredients and salt and can be used interchangeably with beef broth in recipes. I find homemade bone broth to be lighter in flavor. We simmer the stock to reduce it by 1/2 to intensify both flavor and create a more viscous consistency.
Ingredients for Making Homemade Bone Broth
Beef Bones: Homemade bone broth requires a little bit of prep in the ingredients. Knuckles, joints, feet, and marrow bones will deliver the best flavor. Use turkey bones in this recipe to make an easy turkey broth.
Vegetables: Onions, celery, and carrots are called ‘mirepoix’ in French cooking and are used often in recipes because the flavor combination is savory and sweet. Add other veggies (anything that might be in the freezer), but always start with these.
Seasonings: The fresher the ingredients, the better the recipe! Fresh herbs, garlic, and peppercorns will infuse the broth with that green, almost floral flavor and aroma. If fresh isn’t available dried can be used at a 3 teaspoons fresh to 1 teaspoon dried ratio.
How to Make Beef Bone Broth
A homemade beef broth is much healthier and more flavorful than the store-bought generic varieties.
- Simmer the bones: Simmering first removed impurities.
- Roast the bones: Roast the prepared bones until they are browned on both sides.
- Slow cook: Add the bones to a slow cooker with the remaining ingredients. Cook on low for up to 48 hours (as per the recipe below).
- Strain, taste, and season.
- Chill and skim off any fat from the top before using or storing.
After chilling the stock, you will see a layer of fat on top of the broth. This can be removed and discarded (or used in place of other fats if you’d like). The stock itself will be gelatinous in texture. Once heated it will melt back into a liquid.
How to Use Beef Bone Broth
Homemade beef bone broth is a healthy way to start the day. Sip on a mug of broth with some added fresh herbs if desired. Add some pieces of beef for something a bit more filling.

Beef Bone Broth Recipe
Ingredients
- 5 pounds beef bones
- 2 large onions not peeled and cut in half
- 5 ribs celery roughly chopped
- 3 large carrots roughly chopped
- 6 cloves garlic peeled
- ¼ cup packed fresh parsley or carrot top greens
- 2 tablespoons black peppercorns
- 2 sprigs fresh rosemary or 1 teaspoon dried rosemary
- 2 tablespoons cider vinegar
- 2 bay leaves
Instructions
- Preheat the oven to 450°F.
- Blanch the bones by placing them in a large pot of cold water. Bring to a boil and boil 15 minutes. Drain well.
- Line a large rimmed baking sheet with foil.
- Add beef bones and roast for 25-35 minutes until browned, turn the bones after 20 minutes. You can broil them a little bit if needed. Discard any fat on the foil.
- Place the bones in a large slow cooker with all remaining ingredients.
- Add 12 cups of water or enough to just cover the bones, depending on the size of your slow cooker.
- Cook the broth in the slow cooker on low for 24 to 48 hours.
- Strain the broth in a cheesecloth lined strainer. Discard the bones and vegetables.
- Taste and season with salt.
- Cool 1 hour and then refrigerate for 4 hours. Once chilled, remove any fat from the top of the broth.
- Add the broth back into a stock pot and simmer to reduce by ½.
