Zucchini snacks have come a long way since just dipping in Dill Dip.  Mini zucchini pizzas are just as much fun to make as they are to eat! It can be noodled, zoodled, grated or lasagna’d but my favorite is to turn them into zucchini pizza bites!

Zucchini is a summer squash grows in abundance and it is so versatile, healthy and flavorful! Not only is zucchini crazy easy to grow, but it’s also easy to preserve or freeze to enjoy year-round. With zero fat and lots of fiber, it’s also loaded with significant amounts of vitamins B6, riboflavin, folate, C, and K, and minerals.

How To Make Zucchini Pizza Bites

This zucchini pizza recipe is a hit with everyone in the family and is a snap to put together. Whether it’s a sleepover or the big game, make these zucchini pizza slices any time!

  • TOMATO SAUCE: Store-bought low carb pizza sauce or a tomato sauce makes this extra quick. Leftover meat sauce is another great option!
  • TOPPINGS: Possibilities for zucchini bite pizza slice toppings are endless. We love pepperoni, crumbled bacon, or sausage. Top with your favorite low carb veggies.
  • CHEESE: Mozzarella is the standard go-to when it comes to pizza because of its creamy, mild flavor and its ability to hold everything together. Zucchini bites can be made with any cheese!

Just add just a few flourishes of basil or red pepper flakes, or a sprinkle of crumbled feta cheese and any crowd will come back for more!

How Long To Cook Zucchini Pizza Bites

Zucchini cooks up FAST, making it these zucchini pizza bites the perfect quick snack or appetizer. It only takes about 5 minutes in the oven to cook the zucchini!

I always turn the oven to broil for an additional 5 minutes or so. This helps the cheese become golden, ooey gooey, and bubbly. YUM!

To Make Ahead

Zucchini pizzas can be made ahead and placed in the fridge until your guests arrive.  When they arrive, simply pop the pan in the oven and enjoy! But don’t forget, this zucchini pizza bites recipe is so versatile, it can also be dressed up for a more upscale presentation!

Zucchini Pizza Bites

Zucchini Pizza Bites are one of our favorite snacks! These delicious pizza bites are topped with our favorite toppings and plenty of cheese for the perfect low carb pizza fix!

Equipment

Ingredients  

  • 2 large zucchini
  • ½ cup low carb pizza or tomato sauce
  • 1 teaspoon oregano
  • 2 cups mozzarella cheese
  • ¼ cup parmesan cheese
  • pizza toppings as desired

Instructions 

  • Preheat oven to 450°F. Line a baking pan with foil and set aside.
  • Slice Zucchini ¼" thick and arrange on prepared baking sheet.
  • Top zucchini slices with pizza sauce, oregano, cheese and your favorite pizza toppings.
  • Bake 5 min or until zucchini is tender. Broil 5 min or until cheese is bubbly and melted.

        1. This will depend on the size of your zucchini. If your zucchinis are 6 inches long, you’ll get 8 slices per serving.

    I would recommend salting the zucchini for 30 minutes, at least, before assuming toppings. It will remove some of the water.

  2. They’re good but the water they make can make them too hot to eat right off and their too juicy. I added salt and pepper to season the zucchini.

      1. The number of slices per serving will depend on how many you get from your zucchini. Divide the total number of slices from your two zucchinis into 6 portions. Hope that helps Jenn!

  3. I tried these and they are very. I cooked mine in a air fryer with racks. I reduced the temp to 300 so the zucchini would have time to cook before the toppings. Delicious the next time I will use yellow squash.

  4. Fantastic! My daughter in law shared this with me bc she tried it and she and my son loved it sooo I made it for a brunch and it was a hit! I used bacon bits and pepperoni pieces did not measure out but rather just layered:) broiling it after 5 minute cook time was a wonderful idea!!

    1. Be sure to cut the zucchini the right thickness, and keep an eye on them while they’re cooking. They cook fast, so if you’re concerned about them being too soft, bake a little less, then broil, and if you find they’re not soft enough, bake a little longer. Enjoy Julie!

    2. Just like cucumbers, salt in a colander and set aside for an hour. I even put mine in the fridge..it helps draw the water out. (I make a lot of cucumber salad in the summer.)
      The water will drain and will help with the sogginess.

    1. We haven’t tried this recipe with eggplant Nancy, but it should work! Let us know if you try it.

    1. I buy whichever low carb sauce is on sale Teresa. Each bite has about 1 teaspoon or so of sauce. Add to your liking!

    1. We have never tried freezing these Katy. The water in the zucchini may cause them to become slightly mushy. If you try freezing them, cooked or uncooked, please let us know!

  6. Hi. I made mine this weekend and used salsa instead of pizza sauce. They were wonderful. Mine were probably undercooked for some because they were crisp, but I made them in a toaster oven which may not have been hot enough. They were a wonderful snack lunch.

    Wow, I absolutely adored these! I’ve never gone back to a recipe page to leave a comment before, but I liked this meal so much that I just had to come back and share! This was very simple, but tasty, and healthy! I used 3 zucchini’s to fill 2 sheet pans and it was enough to fill me and my husband as a dinner by itself. At first I was using thicker shredded mozzarella cheese. When that bag ran out, I opened and used finely shredded mozzarella cheese and it was a lot easier to pinch and pile on top of the zucchini slices. I accidentally cooked this 50 degrees lower than the recipe calls for, so I just kept it in a few mins longer and it worked. I can’t wait to make these again next week. They’ll definitely be a regular meal for us! Thanks for the recipe 🙂

  8. They weren’t soggy? You didn’t say if you “salted” them or not. AND, did you broil for 5 min? That seems like a LONG time to broil.

    1. These are not soggy. We broiled them for 5 minutes, but you can broil until they are done to your liking. Enjoy Karen!

      1. Hi Jutta, we have never tried cooking this recipe on a gas grill so I am not sure how it would turn out. But I would love to hear how it works for you!

    1. Great question Sue! Broiling is a setting on most North American ovens that uses only the top heating element in the oven (heating from the top down). In the UK, I know a salamander grill does the same type of thing. Hope that helps!

  9. So, its best to bake zucchini and then broil after? So, about 5 min and 5 minutes each method? Of course depends on zucchini thickness.

    1. I’ve never tried with spaghetti squash. I’m not sure that the texture would work for this. Let us know if you do try it Geneva!

  10. I’m on a strict 25 carb a day limit. That means I can only consume 8 carbs per meal if I eat 3 meals a day. The serving size for this recipe says it’s1/3 of a zucchini for 4 carbs. I would only be able to eat a few pieces and that would account for an entire meal alone for someone on my particular diet plan.

    The sauce is the culprit and isn’t recommended for my diet plan because of the high carb content.

    1. You could try replacing the low carb sauce with something else low carb (pesto would be delish) or omit it altogether and add a bit of extra seasoning for flavor!

    Yes. Slice then lightly salt. The salt helps pull out the moisture in the zucchini, and there’s a lot of moisture in zucchini.

  12. Instead of Salting… I’m going to try tossing the zucchini on my dehydrator ahead of time…. dry them down a bit that way. (Prior planning needed to get the timing right.)

    Made this for lunch guests yesterday and it was a huge hit! Absolutely delicious! the hint of oregano on the pizza sauce was a nice flavourful touch. We made it exactly as printed and it turned out perfect

    These were AMAZING!!!! my new favorite way to make zucchini… would work great with summer squash as well. I had been doing something similar with just cheese but the pizza spices and toppings definitely make it way better.
    I did pepperoni and ham. Didn’t have any pizza sauce but they still turned out great. I also added garlic powder.
    Great recipe.
    Kids liked them.
    Perfect for low carb and SCD.

    Hi, I don’t like zucchini and am always searching for recipes that get them in me while masking their flavour. This did well on those criteria… however… there are SOOOOO many of them ( I had smaller zucchinis girth-wise and wound up with 70 slices(!))… we did our best but there are some left over. How long and at what temp to reheat them so they aren’t soggy or overdone? I need help as I’m definitely a beginner in the art of zucchini…

    1. I haven’t tried it but they can easily overcook. I’d broil again to reheat. They can also be chopped and added to a pasta sauce.

  18. These are delicious! I also baked for 5 minutes, and then sprinkled some panic bread crumbs on top of the cheese and then broiled for 5 minutes. Loved the added crunch!

    Loved these! While my husband was having potato skins I had these zucchini skins instead. Only had a small zucchini so sliced it lengthwise and did the sauce, Italian seasonings, cheeses and pepperoni. Cooked in my toaster oven per directions. FANTASTIC! Will try these again and again!! Yum!

    1. Glad you are enjoying them. If your zucchini is quite juicy, you can pat dry with a paper towel before arranging it on the baking sheet to help with that.

    Have made these twice this week. Love it! Flexible with toppings, like pizza. Saw that some folk placed salt on the slices to draw moisture out. I did that today, only had time to let it sit 25-30 minutes, then I wiped most of the salt off, as this sauce too much sodium already. Total yum. Thanks!

    We have been making these on the grill with a variety of toppings and leftovers, pepperoni, bbq chicken, taco stuff. Canadian bacon and green olives is our crazy favorite but all pizza are good on zucchini.

    I like this so much I make it more than I probably should. I use a pizza pan (the round kind with the holes in the bottom) and it doesn’t turn out soggy at all. If you like pizza all the time, this is a great, tasty alternative!

    I love these but found them to be too wet unless I put them on a mesh pizza pan and a regular pizza pan underneath. Great for my diet and husband who is diabetic. Doesn’t spike his blood sugar.
