Ingredients and Variations

Chicken – Chicken tenders, strips, thighs, or breasts cut into cutlets will all work in this recipe. Leftover meatballs or Italian sausage all go great with the sauce (and you’ll still get that proposal)!

Tomatoes – A little tomato paste and some sun-dried tomatoes add a tangy flavor to this dish.

Sauce – Heavy cream makes the best base, but you can use canned coconut milk as a non-dairy alternative (it won’t be as thick, however). Short on time? Use a jar of Alfredo sauce instead.

Variations – Choose keto-friendly veggies like chopped spinach, kale, artichoke hearts, sliced mushrooms, or zucchini.

How to Make Marry Me Chicken

  1. Cook seasoned chicken in oil and transfer to a plate to keep warm.
  2. Cook garlic, basil, and red pepper flakes in the remaining oil.
  3. Stir in cream, broth, tomato paste, and salt. Simmer.
  4. Add chicken and sundried tomatoes to the pan and cook (per recipe below).
  5. Remove from heat, stir in parmesan, and garnish with fresh basil before serving.

Easy Marry Me Chicken Recipe

Equipment

Ingredients  

  • 2 tablespoons olive oil
  • 1 pound chicken cutlets
  • ¾ teaspoon salt divided
  • ½ teaspoon black pepper
  • 2 cloves garlic minced
  • ½ teaspoon dried basil
  • ½ teaspoon red pepper flakes
  • ½ cup heavy whipping cream
  • ¾ cup chicken broth
  • 1 tablespoon tomato paste
  • ½ cup sundried tomatoes
  • ½ cup grated Parmesan cheese
  • 1 bunch fresh basil for garnish

Instructions 

  • Season the chicken with ½ teaspoon salt and pepper.
  • In a large skillet, heat 1 tablespoon of oil over medium-high heat.
  • Add the chicken and cook, in batches if needed, for 3 to 4 minutes per side or until cooked through. Transfer to a plate to keep warm.
  • Add the remaining oil and add the garlic, basil, and red pepper flakes. Cook for 1 minute.
  • Stir in the heavy cream, broth, tomato paste, and remaining ¼ teaspoon salt and simmer uncovered until slightly thickened, about 5 to 8 minutes.
  • Add the chicken and sundried tomatoes to the pan. Simmer for an additional 3 to 5 minutes or until the chicken is heated through.
  • Stir in the Parmesan cheese and garnish with additional fresh basil if desired.

Notes

  • Replace cutlets with boneless skinless chicken breasts. Starting with the thicker end, cut the chicken in half horizontally with a filet knife before cooking, or pound it with a meat tenderizer until ½  to ¾ inch thick.
