- 1 cup cottage cheese
- 2 eggs
- 1 tablespoon grated parmesan cheese
- ½ teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ cup low carb pizza sauce or marinara sauce
- 1 ¼ cup shredded mozzarella cheese
- pepperoni slices or your favorite pizza toppings
Instructions
- Preheat oven to 350℉. Line a rimmed baking tray with parchment and grease well.
- In a blender combine cottage cheese, eggs, Parmesan cheese, Italian seasoning, and garlic powder.
- On prepared baking tray, pour mixture and spread into a circle.
- Bake for 30 minutes or until set.
- Top the pizza crust with low carb pizza sauce, mozzarella cheese, and pepperoni. Return to the oven and bake for 10-15 minutes more, or until cheese is melted and starting to brown.
- Allow to rest for 5 minutes before cutting.
Notes
- Keep leftovers in an airtight container in the refrigerator for 3 days and in the freezer for 1 month.
