Cottage Cheese Pizza

Cottage cheese pizza gets a low carb twist with a creamy, protein-packed crust and melty, cheesy toppings.

Ingredients  

  • 1 cup cottage cheese
  • 2 eggs
  • 1 tablespoon grated parmesan cheese
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ cup low carb pizza sauce or marinara sauce
  • 1 ¼ cup shredded mozzarella cheese
  • pepperoni slices or your favorite pizza toppings

Instructions 

  • Preheat oven to 350℉. Line a rimmed baking tray with parchment and grease well.
  • In a blender combine cottage cheese, eggs, Parmesan cheese, Italian seasoning, and garlic powder.
  • On prepared baking tray, pour mixture and spread into a circle.
  • Bake for 30 minutes or until set.
  • Top the pizza crust with low carb pizza sauce, mozzarella cheese, and pepperoni. Return to the oven and bake for 10-15 minutes more, or until cheese is melted and starting to brown.
  • Allow to rest for 5 minutes before cutting.

Notes

  • Keep leftovers in an airtight container in the refrigerator for 3 days and in the freezer for 1 month.
