- 3 tablespoons butter
- 1 small onion diced
- 5 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 1 ½ teaspoons cumin
- 1 ½ teaspoons garam masala
- 1 teaspoon coriander
- ½ teaspoon chili powder
- ½ teaspoon tumeric
- ⅛ teaspoon cinnamon
- 14 ounces crushed tomatoes
- 1 cup heavy cream
- 2 cups cooked chicken shredded
- ¾ teaspoon kosher salt or to taste
Instructions
- Melt butter over medium heat. Add onion and cook until tender, about 4 minutes. Add garlic and ginger and cook 1 minute more.
- Stir in cumin, garam masala, coriander, chili powder, turmeric, and cinnamon and cook until fragrant, about 2 minutes.
- Stir in the tomatoes and heavy cream, simmer 6-8 minutes or until slightly thickened.
- Add cooked chicken and simmer 3-4 minutes more or until heated through. Season with kosher salt to taste.
- Serve over cauliflower rice and garnish with cilantro if desired.
