Just 3 Ingredients

Bacon: Bacon takes everything to the next level of delish! Regular-cut bacon will wrap better and get crispier than thick cut bacon strips. Pancetta works if you want a fancier wrapped dish.

Brussel Sprouts: For the best flavor, use fresh Brussel sprouts and pull off any wilted or damaged outer leaves. Frozen Brussel sprouts can be used, however, they’ll need additional baking time and won’t be as firm.

Brown Sugar Substitute: Swerve is a popular substitute which works well in this recipe. Just a sprinkle is all you need for the perfect glaze on bacon wrapped Brussel sprouts.

Variations

Save time and clean up by making bacon wrapped Brussels sprouts in the air fryer and switching out maple syrup for keto maple syrup made with monk fruit. Bring on the heat and brush on a little sriracha or gochujang once the sprouts are fully baked. Garnish cooked sprouts with a sprinkle of toasted sesame seeds for a more elegant presentation if you like.

How to Make Bacon Wrapped Brussel Sprouts

  1. Wash Brussel sprouts and trim the tops.
  2. Cut bacon into thirds and wrap a piece around each sprout.
  3. Place seam side down on a prepared baking sheet.
  4. Sprinkle brown sugar over the bacon.
  5. Bake until the bacon is crispy and the sprouts are tender (recipe below).

Recipe Tips

  • Be sure to use Brussel sprouts of similar size so they cook evenly, or you can cut them in half vertically so part of the stem stays intact on both sides.
  • Use a toothpick to secure the bacon to the Brussel sprouts and serve them with the toothpick or without.
  • Bake on a rack so the bacon grease drains away from the Brussel sprouts, or transfer the sprouts to clean paper towels to drain.

Bacon Wrapped Brussel Sprouts

These low carb bacon wrapped sprouts are loaded with flavor for the perfect appetizer.
Prep Time 20 minutes
Cook Time 22 minutes
Total Time 42 minutes
Servings 6

Ingredients

  • 1 pound bacon
  • 1 ½ pounds fresh Brussels sprouts
  • ¼ cup brown sugar substitute like Swerve

Instructions

  • Heat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
  • Rinse the Brussels sprouts, removing any discolored leaves. Cut sprouts larger than 1 inch in half.
  • Remove the bacon from the package without separating the slices and cut it into thirds.
  • Wrap a piece of bacon around each Brussels sprout and place them seam-side down on the baking sheet. Use a toothpick to secure the bacon if needed.
  • Sprinkle the brown sugar Swerve overtop of the bacon.
  • Bake for 22-27 minutes or until the bacon is crispy and the Brussels sprouts are tender.

Notes

  • Use Brussel sprouts similar in size so they cook evenly. Larger sprouts can be cut in half vertically, through the stem.
  • Try baking on a rack so the bacon grease drains away from the Brussel sprouts.
  • If you do not have Swerve, use brown sugar sparingly. Or try a low carb or keto friendly syrup instead.
