These grilled turkey burgers are packed with peppers, onions, and southwest seasoning, then topped with grilled fajita veggies and a creamy sauce. They are juicy, colorful, and perfect for an easy low carb grill night.
3bell peppersone each of red, green and yellow peppers (divided)

3tablespoonsSouthwest Seasoningdivided
1tablespoonwater
1tablespoonolive oil
2poundslean ground turkey
1½tablespoons cilantrochopped
1clovegarliccrushed
1teaspoonthyme
1teaspooncumin
1jalapeno pepperseeded and finely diced (optional)
Southwest Sauce
⅓cupfat free greek yogurt
3tablespoonslight mayonnaise
1½tablespoonssouthwest seasoning
Instructions
Southwest Sauce:
Mix together sauce ingredients and refrigerate.
To Marinate Veggies:
Cut a red, green and yellow pepper in half. Set each half aside for later.
Slice the peppers and ½ red onion into large pieces.
In a small bowl mix 1 tablespoon southwest seasoning, 1 tablespoon water and 1 tablespoon olive oil. Toss with veggies and set aside.
To Make Burgers:
Preheat grill to medium high.
Dice remaining ½ red pepper, green pepper & yellow pepper. Mince red onion to make 2 tablespoons.
In a large bowl, combine ground turkey, diced peppers, minced red onion, cilantro, garlic, thyme, cumin & 1 tablespoon southwest seasoning just until mixed.
Divide into 8 equal pieces and form into ¾" thick patties.
Lightly spray each patty with no stick spray and sprinkle with Southwest Seasoning. Grill about 4 to 5 minutes on each side or just until cooked through (do not overcook). Meat should reach 165°F. Cover and allow to rest.
Assembly
Grill marinated veggies about 5 minutes or until just softened. Slice veggies into narrow strips
Top each burger patty with veggies and 1 Tablespoon south west sauce. Serve.
Notes
Keep leftover burgers, sauce, and grilled vegetables separately in airtight containers in the refrigerator for up to 4 days.
