Slice cheese into ½-inch thick slices. Brush both sides with 1 tablespoon olive oil.
Preheat grill to medium-high heat.
Place halloumi directly on grate and grill for 3 minutes on each side. Drizzle with remaining olive oil (if desired) and season with salt and pepper to taste. Serve immediately.
