oil

egg

chicken
cooked and diced

cup
green peas

grated carrot

sliced green onion
white and green divided

cloves
garlic
minced

teaspoon
grated ginger

cauliflower
riced
1 ½
tablespoons
soy sauce

teaspoon
sesame oil
Instructions
Heat 1 teaspoon oil in a large skillet. Whisk egg and pour into skillet. Cook just until set, about 2 minutes. Remove, finely chop, and set aside.
Heat remaining oil over medium heat. Add garlic, ginger, and green onions. Cook until fragrant.
Add cauliflower, carrot, peas, and chicken. Cook an additional 5-6 minutes or until cauliflower is softened.
Stir in egg, soy sauce, sesame oil & remaining green onion. Cook 1 minute more.
