Toss cubes with the garlic powder and Cajun seasoning mixture. Chill for 30 minutes.
Heat olive oil in a large pan over medium heat.
Add half of the cubes of pork and cook them for 3 minutes without stirring. Mix them around until they are browned on all sides for about 3 more minutes.
Repeat the process with the rest of the cubed pork. Add them all back to the pan and heat thoroughly.
Season with salt & pepper and serve.
Notes
Pork should be a little bit pink inside and reach an internal temperature of 145°F.
