Ingredients

blackened seasoning

butter
Instructions
In a small bowl, combine paprika and blackened seasoning.
Pat cod dry with paper towel. Rub all sides of the cod with the seasoning.
Heat a 10-inch skillet over medium heat and add olive oil and butter.
When the oil is hot and butter is melted, add the cod and cook for 2-6 minutes per side* or until blackened and cooked through. Do not overcook.
Notes
Blackened seasoning can be very salty so taste the seasoning and adjust the amount as needed.
Once the fish becomes flaky, remove it from the pan right away to avoid over-cooking. A meat thermometer will help to test if it is cooked.
Thicker filets will need closer to 4 to 5 min per side, thinner filets will need closer to 2 to 4 minutes.
