Remove the white membrane from the back of the ribs by gently pulling it off. Rinse the ribs under cold water and dry them off with paper towels.
Mix the rib rub ingredients together and massage the rub into the ribs. Place the ribs on a foil-lined tray and cover them with sliced onions and garlic.
Bake the ribs for 2 hours. After 2 hours, check if they're tender. If not, bake for another 20 minutes and check again.
Remove the ribs from the oven and discard the juices, onions, and garlic. Brush the ribs generously with sugar-free barbecue sauce if desired.
Grill or broil the ribs over medium-high heat for 5-10 minutes until the sauce adheres to the meat.
Notes
Fat will drain well from ribs placed on a rack, or even placed on the sliced onions.
Refrigerate leftovers in an airtight container for up to 4 days and freeze portions in a zippered bag for up to a month
Thaw in the refrigerator before reheating in the microwave or air fryer.
