strip bacon

medium onion
diced fine

cottage cheese

red pepper

mushrooms
sliced

flour

fresh spinach
cooked and squeezed dry

cheddar cheese
shredded
Instructions
Preheat oven to 350°F. Lightly grease a 9×13 inch dish.
Scramble fry the bacon and onion.
Beat the egg whites until fluffy, almost doubled in size. Add the eggs and cottage cheese.
Combine the red pepper and mushrooms with the flour. Add the spinach, cooked onion and bacon and toss.
Combine the vegetables with the egg mixture and pour into dish.
Bake for 25 minutes then sprinkle the cheddar cheese and return to oven for 10-15 minutes more.
Cheese should be melted and eggs cooked.
Notes
If using frozen spinach, squeeze liquid out. Use about 1 cup frozen spinach.
