Grilled Chicken Cordon Bleu

- 4 boneless skinless chicken breasts
- 4 tablespoons dijon mustard
- 1 packet sweetener of your choice
- 4 tablespoons mayonnaise divided
- 1/2 tablespoon soy sauce
- 1 teaspoon lemon juice
- 4 slices deli ham
- 4 oz swiss cheese
Mix together Dijon, Soy Sauce, Lemon juice, sweetener and 1 tablespoon of the mayonnaise. Remove 1 tablespoon of this mixture and set aside.
Combine the chicken breasts and the remaining marinade and let sit up to 4 hours in the fridge.
Preheat the grill to medium and grill the chicken 6-7 minutes per side or until juices run clear and the chicken reaches 170 degrees.
Add ham and cheese on top and close grill for about 1-2 minutes or until cheese melts. Serve immediately.
Combine the reserved tablespoon of marinade with the remaining mayonnaise. Serve as a dipping sauce.
