Easy Low Carb Pesto Chicken

Pesto Chicken is a fun way to bake chicken thighs or breasts. They are topped with pesto, tomatoes, and mozzarella, then baked until lightly golden brown and bubbly.

  • 4 chicken breast halves 5-6 oz each
  • 1/2 cup pesto
  • 2 Roma tomatoes 1/2" slices
  • 4 slices mozzarella cheese
  • 2 tablespoons fresh basil


  • Preheat oven to 400°F.
  • Toss chicken with pesto and place in a shallow baking dish. Bake 25-30 minutes or until chicken reaches 165°F.
  • Top chicken with tomato slices and cheese. Broil 2-3 minutes or until cheese is bubbly and melted.
  • Sprinkle with fresh basil and serve.
