Cucumber Feta Salad
This cucumber feta salad is made with ribboned cucumber tossed in a homemade dressing then topped with feta cheese. Serve as a side dish or a light lunch!

Ingredients

finely crumbled
Dressing

olive oil

fresh lemon juice

salt and pepper to taste
Instructions
Wash and run a vegetable peeler
down the length of a cucumber, creating long strips. Stop when you reach the seeds.
Combine the dressing ingredients and gently toss with the cucumber ribbons.
Top with feta cheese and allow to sit for 15 minutes before serving.
