When it comes to low-carb cooking, versatility is the name of the game. To stay on track at dinner time, it’s super important to have easy toppings and healthy mix-ins on hand. That’s where this simple roasted bell peppers recipe comes in handy! We love to have a container of these on hand in the fridge to add extra flavor to salads, frittatas, casseroles, or appetizers. The uses for bell peppers are endless, and they are super easy to make in the oven.

Roasted Peppers Recipe Ingredients

This easy recipe has just a few simple ingredients!

BELL PEPPERS – Use a colorful mix of red, green, orange, or yellow bell peppers for this recipe. Or if desired, just pick one color—it’s the chef’s choice!

OIL – Olive oil tastes the best in this recipe. But feel free to use any type of preferred oil, like avocado oil or grapeseed, which both have a mild flavor and a higher smoke point.

GARLIC – Freshly minced garlic is the best, but a sprinkle of garlic powder will taste terrific, too!

SEASONING – Salt & pepper to taste, & Italian seasoning makes everything taste better. This versatile seasoning works on everything from fish to veggies, and this recipe is no different. Make your own blend or use a store-bought variety.

How to Roast Bell Peppers

It’s easier than most recipes since it doesn’t require removing the skins on the peppers after roasting!

  1. Cut peppers and toss with seasonings
  2. Roast in preheated oven (per recipe below.)

Where to Use Roasted Peppers

The applications for these tasty peppers are endless! Mix into a low carb baba ghanoush! Top a Low Carb Meatloaf with onion and roasted peppers to up the flavor. Add roasted red peppers to hummus or baba ganoush. Perfectly Roasted Peppers Recipe

Ingredients  

  • 1 large green bell peppers
  • 2 colored bell peppers red, yellow or orange
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic minced
  • salt & pepper to taste

Instructions 

  • Preheat oven to 425°F.
  • Cut peppers into bite sized pieces and toss with remaining ingredients.
  • Place on a baking sheet and roast 18-20 minutes or until browned.
  • Serve immediately.
