Ingredients  

  • 1 red onion diced
  • 1 yellow pepper chopped
  • 4 tomatoes chopped
  • 1 long English cucumber chopped
  • 1 cup feta cheese crumbled optional
  • ¼ cup Kalamata olives optional

Dressing

  • cup olive oil
  • ½ lemon juiced
  • 2 Tablespoons red wine vinegar
  • 1 pinch swerve sweetener
  • 1 teaspoon oregano
  • ½ teaspoon basil

Instructions 

  • Combine all dressing ingredients in a small jar and shake until fully incorporated.
  • In a large bowl combine the red onion, yellow pepper, tomatoes, cucumber, feta cheese, and olives if using them.
  • Pour the dressing over the salad and toss to combine.
